Spinach Stuffed Chili

Quick and easy, loaded with vegetables

Ingredients
  1. 1 lb ground turkey
  2. 1 can organic kidney beans
  3. 1 can organic plum tomatoes
  4. 1 can organic tomato paste
  5. 1 bunch of spinach, trimmed
  6. 1 red pepper, chopped
  7. 1 medium spanish or sweet onion, chopped
  8. 3 stalks celery, chopped
  9. 2 tsp chill powder
  10. 1 tsp chili flakes
  11. 1 tsp garlic powder
  12. 1 tsp turmeric
  13. 1 tbsp olive oil
  14. 1 tsp oregano
  15. 1 tsp parsley
Instructions
  1. In a pan, add ground turkey and a 1/2 cup of water. Stir occasionally. Ensure cooked all the way through.
  2. In a sauce pan, heat the olive oil.
  3. Add onions and lightly sautee
  4. Add red peppers and celery and stir.
  5. Add tomatoes to the mixture and rinsed beans.
  6. Stir in spices and tomato paste
  7. Once cooked add ground turkey and stir.
  8. Slowly add in spinach a handful at a time and stir. You may have to wait a bit for spinach to wilt before adding more.
  9. Cover and let simmer for 15 or more minutes.
If you want a vegetarian version sub out the ground turkey for
  1. 1lb plain tofu or
  2. 1.5 cups cauliflower pieces + 1.5 cups portobello mushrooms
