Meatless Cauliflower Taco

Use cauliflower and carrots to give you the texture of meat in this tasty taco.

Servings 4

Ingredients

  • .5 head cauliflower
  • 2 carrots, diced
  • 2 stalks celery
  • 1 sweet small onion, diced
  • 1 red pepper, diced
  • 1 can can of organic black beans
  • 1 can can organic tomato paste
  • 1 tsp paprika
  • 1 tsp chili powder
  • 1 tsp black pepper
  • .5 tsp sea salt
  • .5 tsp Cayenne Pepper
  • 1 tbsp olive oil
  • 8 gluten free corn taco shells
  • 1 avocado, mashed
  • .5 tsp garlic powder
  • .5 lime squeezed
  • 2 tbsp fresh cilantro or parsley, chopped

Instructions

  1. Place chunks of cauliflower in the food processor and blitz until minced.  You can do this with the carrots as well to save on chopping.

  2. Heat 1 tbsp olive oil in a non-stick pan with spices

  3. Add onions, peppers, carrots and celery to the pan of spices

  4. Saute for about 5 minutes until onions are soft

  5. Add tomato paste and 1/2 lemon squeezed and stir. You can also used crushed tomatoes instead of tomato paste.

  6. Stir in black beans and cauliflower into mixture and cook for 10-15 minutes

  7. Mash ripe avocado with garlic powder, lime and chilli peppers

  8. Add taco mixture to tacos and top with guac, cilantro or parsley

You could also add tofu for added protein
