Black Bean & Beef Stir Fry

Ingredients

  • 1 lb cubed beef
  • 2 tbsp olive oil
  • 1 head of broccoli
  • 1 can of organic black beans rinsed
  • 1 yam peeled and cubed
  • 3 cups of baby spinach
  • 1 red pepper chopped
  • 1 sweet onion chopped
  • 1 tsp black pepper
  • 1 tsp chili pepper
  • 1 tsp oregano
  • 1 half lemon juiced

Instructions

  1. In a pot, boil cubed yam in enough water to cover. Let boil for 10-15 minutes or until soft. Drain and discard water.
  2. In a pan, add cubed beef, 1/2 cup water and black pepper. Allow to cook until outside is brown. Approx 5-7 minutes. Strain and discard and water
  3. In another pan, add 2 tbsp olive oil, onions, pepper and black beans. Cook over medium heat. Stir together and let cook until onions are soft and translucent. Add broccoli and cook for another 2 minutes. Add cooked yam, beef, spinach and remaining spices. Cover for 2-3 minutes until spinach is wilted but not over cooked.
  4. Serve and enjoy
