Ingredients
1lbcubed beef
2tbspolive oil
1head of broccoli
1can of organic black beansrinsed
1yampeeled and cubed
3cupsof baby spinach
1red pepperchopped
1sweet onionchopped
1tspblack pepper
1tspchili pepper
1tsporegano
1half lemonjuiced
Instructions
In a pot, boil cubed yam in enough water to cover. Let boil for 10-15 minutes or until soft. Drain and discard water.
In a pan, add cubed beef, 1/2 cup water and black pepper. Allow to cook until outside is brown. Approx 5-7 minutes. Strain and discard and water
In another pan, add 2 tbsp olive oil, onions, pepper and black beans. Cook over medium heat. Stir together and let cook until onions are soft and translucent. Add broccoli and cook for another 2 minutes. Add cooked yam, beef, spinach and remaining spices. Cover for 2-3 minutes until spinach is wilted but not over cooked.
