Chocolate Cherry Coconut Energy Bar

Raw, delicious, all natural

Ingredients

  • 1 cup roasted almonds
  • 1/2 cup salted cashews
  • 1/2 cup pumpkin seeds
  • 1/2 cup sunflower seeds
  • 1/4 cup melted coconut oil
  • 1/2 cup dried organic unsweetened cherries
  • 1/2 cup cacao nibs
  • 1/4 cup chia seeds
  • 1 tsp vanilla
  • 1 scoop Vega One or other protein powder
  • 1/4 cup cocoa powder
  • 1 tsp cinnamon
  • 1/2 tsp sea salt
  • 1/4 cup coconut flakes raw and un-sulphured

Instructions

  1. Put all ingredients in a food processor and blend until smooth.
  2. Roll out onto parchment paper
  3. Sift un-sulfured raw coconut flakes on top
  4. Cut into squares or use a cookie cutter
  5. Store in fridge or freezer
  6. Enjoy!
