Harissa Spiced Chicken Stir-fry

An aromatic delicious balanced meal

Ingredients

  • 2 skinless boneless chicken breasts
  • 1 tbsp coconut oil
  • 2 tbsp harissa spice
  • 1 red pepper diced
  • 1 zucchini sliced
  • 4 cremmini mushrooms sliced
  • 2 cups green beans trimmed and cut in half
  • 1 tsp sea salt
  • 1/2 lemon juiced

Instructions

  1. In a pan heat the coconut oil and add the harissa spice
  2. Cut chicken into bite sized pieces
  3. Add chicken to pan and cook until both sizes are cooked
  4. Add chopped veggies and allow to cook until chicken is cooked all the way through.
  5. Add the juice of 1/2 lemon and additional sea salt to taste

Recipe Notes

Don't have harissa. Make your own blend with cumin, chilli, corrinder, garlic, mint, caraway and cayenne
Use any veggies you love or have on hand.
