Coconut Chia Pudding

Ingredients

  • 1 cup unsweetened oat milk
  • .25 cup chia seed
  • .5 scoop protein powder
  • .25 cup unsweetened coconut flakes
  • .5 cup blueberries
  • 1 tbsp raw pumpkin seeds
  • .25 tsp pure vanilla extract
  • .25 tsp cinnamon
  • 1 pinch sea salt

Instructions

  1. In a mason jar or other sealable container, add the oat milk and chia seeds and shake well

  2. Add protein powder and coconut flakes and shake again

  3. Add remaining ingredients and shake a final time

  4. Store in sealed container overnight in the fridge

  5. Stir everything one more time in the morning before eating
