Gingered Rapini & tofu

Ingredients

  • 1 block of plain organic Tofu
  • 2 " ginger root
  • 1 green onion
  • 2 garlic cloves
  • 2 tsp tamari
  • 1 bunch rapini
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil lightly, then add grated ginger, tamari, green onion and garlic.
  2. Saute for a couple minutes then add tofu and allow to brown for a couple minutes
  3. Wash and chop Rapini,
  4. Add to pan with sautéed green onion and garlic
  5. Cover lid and allow to steam till stalks are soft
