Coconut Vegetable Medley

A one pot wonder stuff full of vegetables!

Ingredients

  • 1 zucchini chopped
  • 1 yellow squash chopped
  • 1 red pepper chopped
  • 1 orange pepper chopped
  • 3 stalks celery chopped
  • 5-8 cremini mushrooms
  • 1 sweet onion chopped
  • 1 block organic firm tofu or substitute your favourite meat protein
  • 1/2 can coconut milk
  • 1 tbsp turmeric
  • 1/2 tsp sea salt
  • fresh pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp chili flakes

Instructions

  1. Add coconut milk to pan, stove top
  2. Add spices and stir
  3. Add chopped vegetables and tofu
  4. Stir together
  5. Cover pot and simmer for 15-45 minutes
  6. Enjoy!
