Heat olive oil in large pot over medium heat. Sauté onion until golden.
Add in minced garlic, carrots, and bell pepper. Stir and cook for about a minute.
Add in potatoes and lentils. Stir and cook for a couple more mins.
Add in tomato paste, turmeric, paprika and cumin.
Pour vegetable stock into the pot and stir. Bring to boil and then reduce heat to simmer for 30-45 mins until the lentils are completely cooked.
Add in salt, pepper, lemon juice and top with parsley.
Substitute in your favourite veggies for a personalized flavour. Serve with fresh sourdough bread.
For more protein, add in some cooked chicken, beef or turkey pieces.
If you don't have stock, you can use water, but add in extra spices like dried parsley, onion powder, and Italian seasoning.
If you like a spicier soup, add in some red chilli flakes!
