Cauliflower Butternut Squash Soup

Here’s a great twist on a fall classic!  A great warm up  and feel good soup.

Cauliflower & Butternut Soup

  1. 2 tbsp coconut oil
  2. 1 butternut squash, peeled and cubed
  3. 4 green onions, chopped
  4. 3" ginger root, chopped
  5. 2 cloves garlic
  6. 1/2 sweet onion, chopped
  7. 1 yam, peeled and cubed
  8. 1 celery stalk, chopped
  9. 1/3 cauliflower
  10. 1/3 cup raw sunflower seeds, hulled
  11. 1 tbsp ground cumin seed
  12. 1 tbsp ground coriander seed
  1. In large pot, warm oil and add spices, ginger and garlic.
  2. Let sautee for 2-3 minutes.
  3. Add onions and let them cook a little until soft.
  4. Add all the vegetables and sunflower seeds and mix well with oil and onions.
  5. Add water, just enough to cover the vegetables and bring to a boil.
  6. Reduce to low and let cook for 20-30 minutes until the vegetables are soft.
  7. Use a hand/immersion blender and puree until smooth.
  8. If too thick, add more water to suit your own preferences.
  9. Serve and enjoy
