Coconut Tofu Curry

Looking for a non-dairy curry recipe?  Try this dairy free, gluten free Chicken Curry.  Use lite coconut milk to save some calories.



1-2 Onions

1-2 Carrots

1 Red Pepper

1 bunch rapini

1 block tofu

1 lemon juiced


Coconut milk (lite)
Curry powder- 1/4 cup
Ground Cumin & Coriander – 1 tbsp
Sea salt/ pepper to taste
1 lemon juiced




Combine ingredients for curry mixture in separate bowl.
In a pan, add onions and carrots and saute lightly.  Add tofu cut into cubes.  Add curry mixture and remainder of vegetables.  Add Rapini at the end. Cook for another 3-5 minutes, covered to steam the rapini
