Ingredients:
6oz of fresh or frozen wild halibut
2 tbsp balsamic vinegar
1 clove garlic
2 tbsp olive oil
1 red pepper, chopped
1 crown broccoli
1 onion, chopped
4-6 cups of spinach
1/2 cup chopped cilantro
1 carrot, sliced length wise
Method:
Warm olive oil, balsamic vinegar and garlic in a pan. Add onions and cook on medium for a couple minutes to soften. Add fish to pan and allow to cook for 4-5 minutes. Turn once and add red peppers, carrots and broccoli and cover for 2 minutes. Add spinach last and re-cover for another couple minutes until spinach is soft. Don’t over cook or veggies will turn brown. Serves two.
