This is basically a twist on vegetarian chili. A one pot meal that is quick and easy and very nutrient dense!
2 carrots, sliced and cut vertically
2 medium beats cut into slices
1 can organic black beans, well rinsed
1 can organic black eyed peas, well rinsed
2 stalks celery, chopped
1 red pepper, chopped
2 tbsp olive oil
1 handful of fresh cilantro
1 tbsp apple cider vinegar
1 tsp chili flakes or hot sauce
1 tsp sea salt
1/4 cup water
Warm oil in large cooking pot. Add beets and carrots and coat with oil. Add beans and peas and water. Add remaining ingredients and stir well. And more water if necessary. Cover and let simmer for 15-20 minutes.
