Avocado Key Lime Pie

Give this interesting take on Key Lime Pie a try. I created this on a cleanse when I was avoiding dairy, sugar, soy and wheat and was looking for a simple treat.

Ingredients

Filling

  • 1/2 cup coconut milk
  • 1-2 tbsp chia seeds
  • 1 ripe avocado
  • 3 drops stevia
  • juice from 3 key limes

Crust

  • 1/4 cup raw almonds
  • Juice from 2-3 key limes
  • 1 drop stevia

Instructions

  1. Blend together with mixer or hand blender, coconut milk, avocado, key lime juice, chia seeds and stevia.
  2. Set aside.
  3. Grind 1/4 cup almonds into powder using coffee grinder.
  4. Add juice from 1-2 more key limes and a drop of stevia to make some crust.
  5. Press into a small dish and add coconut/avocado filling.
  6. Let sit for a few hours to solidify.
