Try this cool and creamy soup in the summer for a fresh change. No cooking required and ready in about 5 minutes!
Ingredients:
1/2 English cucumber, peeled
1 ripe avocado
1 tsp minced garlic
1 tbsp olive oil or coconut oil
1 tsp ground coriander
1 tbsp fresh parsley
1 tbsp fresh cilantro
2 limes juiced
dash of red pepper flakes
1 tsp sea salt
Directions:
Using a food processor or blender combine all ingredients and puree until smooth. Add water 1/4 cup at a time until desired consistency is reached.
