April 9, 2012 Kale is a dark green leafy that usually has to be steamed as it is very bitter, however try this recipe to use it raw in this great salad.
Ingredients
2 chicken breasts
1 head Kale
1 tbsp sea salt
1 lemon juiced
2 avocados, ripe and chopped
1/4 cup olive oil
Grill 2 skinless, boneless chicken breasts for about 15 minutes or until fully cooked. Or use left overs from a whole chicken. De-stem the kale and rip into pieces. Add sea salt and knead into the leaves until they soften and become a vibrant dark green. Add chopped avocado and lemon juice and toss with olive oil. Add cooked chicken pieces and stir together. Enjoy!
