Kale Gazpatcho

This is a green twist on a typical tomato based soup. No cooking makes it perfect for the summer and it's ready in less than 5 minutes.

Ingredients

  • 5-8 kale leaves de-stemmed
  • 1 leek
  • 1 English cucumber
  • 1/2 avocado
  • 1-2 limes juiced
  • 1/4 cup mint leaves
  • 1/4 cup fresh cilantro
  • salt and pepper to taste
  • 1-2 cups water as needed

Instructions

  1. Using a food processor combine all ingredients and blitz until smooth.
