Fresh pesto is great for seasoning chicken, tofu, pasta, rice or even crackers. This recipe is quick and easy, especially if you have fresh basil in your garden.
Ingredients
1 basil bunch or about 2 cups of basil leaves
1 cup spinach
¼ cup Raw nuts of your choice, chopped: almonds, walnuts, sunflower seeds
2 Garlic cloves
1 pinch Sea salt
¼ cup Olive Oil
Juice of 1 lemon squeezed
Method
Coarsely chop basil and spinach. Add finely chopped nuts and minced garlic. Place in medium sized bowl. Add Spices Cover mixture with olive oil (just enough to coat mixture). Use a hand blender of food processor to blitz for a couple seconds until all ingredients are pureed together.
